Meet Pietza
Pizza is the perfect street food product: it is prepared fast, everyone likes it and it is perfect for sharing. Bart van Dun (left) and Ivo Boutkan (right, both 26) saw an opportunity and a business.
The two friends met during the Hospitality Management study and then both worked as a manager in restaurants for a while. Both ready for something new when Down Town Gourmet Market came on their path: “During a beer in the pub, we first heard about the plans for a new food hall in Eindhoven. Slightly careful, we said to each other: that might be something. ” Now, four years later, Pietza is not only a household name within the foodhall, but throughout the whole city Eindhoven. What is the secret? “We make sure that Italians really like our pizzas,” Bart says “If so, you’re doing it right.”
Where Ivo has worked in several pizzerias and has a lot of experience with pizza baking, Bart had never baked a single pizza before they had dived into this project together. “We tested pizza dough for a whole year before the grand opening.” Ivo says while laughing. The men are now convinced of their recipe and say that the quality of their pizza has been constant for years: with a lot of attention and only qualitative, decent ingredients. “The quality has to constantly be the same, but we try to stay innovative in creating unique flavor combinations on a pizza.” Every month they make a unique special as Pizza Of The Month. One of the best-selling pizzas they had, prawns with avocado cream and tortilla chips, once started as such a try out.
What is absolutely remarkable is how both boys, despite the team they have, still work themselves from day one. They both agree on this: “There is always one of us present to ensure that the quality we have worked hard for is guaranteed.” They say that there is always a good, friendly atmosphere in the kitchen. “But man, is it hot next to that pizza oven,” they both laugh.
